Lemon Balm is a very aromatic herb with delightful lemon tones.  Very useful in brewed teas, sun teas, flavoring fruit, in salads, smoothies, water.  Add to Chicken or Fish dishes toward the end of the cooking process.  Growth habit is in a clump.  Plant responds well to being cut back.  It will re-grow twice as thick. Will not spread by root like mint.  Clump gradually grows larger each year.

USE and STORAGE:

Harvest similar to mint or oregano.  Pinch off the tops above leaf nodes. This will promote plant to bush out.  The more you harvest, the more it will produce.

 

Lemon Balm may be used:

1. Immediately after harvest,

2. Stored in a glass of water for 2-7 days
